1½ cups whole wheat flour
½ teaspoon baking soda
¼ teaspoon salt
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
a pinch of cardamon
1 cup sugar
¼ cup butter, softened
2 eggs, beaten
1 ripe banana, mashed
1½ teaspoons finely grated orange peel

cup blueberries
1 cup chopped walnuts
Combine dry
ingredients; set aside. Cream butter and sugar. Add eggs,
banana, and orange zest. Add flour mixture, stirring just until
combined. Stir in blueberries and walnuts. Pour into a greased
9" x 5" x 3" loaf pan. Bake at 350° for about an
hour or until toothpick inserted in center comes out clean. Cool on
rack 10 minutes. Remove from pan and allow to cool thoroughly on
rack.
Like most nut
breads, this is best if baked the night before. This allows the flavors to
mellow and makes the loaf easier to slice in the morning.
